This Riesling from the MoselleSteep slope breaks with convention. It is our answer to the question of what attitude tastes like when you give the grape the freedom to show its edge. Unfiltered, lively and uncompromisingly honest.
The kick: Through the Mash fermentation (skin contact) gives this Riesling structure and grip. Expect aromas of dried orange peel, wild sage and a cool, smoky minerality that comes directly from the slate.
The craft: More consistent Natural Wine. Spontaneous fermentation with wild yeasts, unfiltered and vegan matured. No fining, no filtration - just the pure energy of the steep slope. Minimal sulphur is only added before bottling.
The attitude: A clear statement against exclusion and for an open society. A wine for dialog and all those who value backbone in the glass and in life.
Food Pairing: A wine for ambitious home cooking. Great with Homemade pasta with sage butter, Braised fennel with lemon, fried chanterelles or a mature, strong mountain cheese.
